    5 corn tortillas, 1/2 16oz. carton of eggbeaters, 1 2oz. slice of ham, diced, 1/2 cup frozen pepper strips w/onions, 1/2 cup leftover Betty Crocker scalloped potatoes,


I change this recipe continuously based on what I have left over in the refrigerator. I also like to add cheese when I'm heating the tortillas.


Warm up leftover diced ham. Add leftover scalloped potatoes and pepperstrips. Heat through. Add eggbeaters. Cook until done. Warm corn tortillas in the microwave. Fill and serve.
