A hearty bread with ground almonds and oatmeal. A hearty bread with ground almonds and oatmeal.
Number of Servings: 10


    1 c. rolled oats
    1 c. water
    1/3 c. honey
    1 tsp kosher salt

    3 tsp yeast
    1/4 c. warm water

    1/2 c. ground almonds
    1 1/2 c. whole wheat flour


Boil water and prepare oatmeal, adding honey and salt.

Combine yeast and warm water in a large bowl. Add oatmeal/honey.

Toast almonds and grind to a fine meal. Add almonds to bowl. Add whole wheat flour by 1/4 cups until a dough ball is formed. Turn ball out onto a floured counter and knead until remaining flour is consumed and dough is slightly sticky.

Place dough in oiled bowl and cover. Allow to rise for 1 hour. Turn onto lightly oiled surface and knead for several more turns. Form into an oblong loaf.

Spray a small loaf pan with cooking spray and press formed loaf into pan. Cover with plastic wrap and allow to rise for 45 minutes.

Bake at 425 degrees for 1 hour.
