Ingredients

3 cans of Organic Coconut Milk Fat
4 egg yolks
1 tsp vanilla
10.5 oz of Enjoy Life brand Chocolate Chips
3 tbsp organic butter
7 egg whites
Directions
Refrigerate your can of coconut milk overnight (2 nights before serving the dish). Do no shake - you want your milk & fat to separate. You will use only the fat in this recipe. (Use the liquids in your coffee... yummy!)
Separate out the egg whites/yolks - make sure there is no yolk at all in the whites, otherwise they won't stiffen.
In a food processor or stand mixer, mix together well the coconut fat, the 4 egg yolks, and the vanilla. Let run while you do the following steps:
Melt together the chocolate chips and the butter in a double boiler. Add to the mixing coconut fat, and continue mixing.
Whip the egg whites until stiff peaks form.
Gently fold the egg whites & the chocolate/coconut stuff together until mixed.
Refrigerate overnight.
