Ingredients

2.5 cups fresh spinach, finely chopped
1 cup fresh mushrooms, finely chopped
1/2 small sweet onion finely chopped
1 cups Maseca brand instant corn tortilla mix
Dash cayenne
2 squirts Bragg Liquid Amino
2 T ground flax seed
Olive oil cooking spray
Tips
These would be great with a variety of toppings. Try salsa, sun-dried tomato pesto, or use your imagination. Toppings will change the nutritional total.
Directions
Finely chop all the vegetables
Place them in a large mixing bowl and add the Maseca
Add cayenne, garlic powder, and Bragg's
Mix well
Add water to form tight dough. You want it to just stick together so you can form it into balls.
If the dough doesn't stick together, add just enough additional water to reach desired consistency
Heat a skillet to medium, spray well with olive oil cooking spray.
Form the dough into 2" balls - keep covered with a towel to keep them from drying out.
When water just spatters on the skillet, flatten your balls into patties about 1/2 inch thick. Spray patty with olive oil and sprinkle with a pinch of flax seed. Cook, lightly press, and flip. Sprinkle additional pinch of flax seed and continue to cook until golden brown on both sides.
Serving Size: Makes 8 3" patties - or 4, 2-patty servings.
