    2 cloves garlic, minced
    3 6-7 oz. boneless, skinless chicken breasts, cubed
    1/4 C. oil-packed sun-dried tomato halves
    1/3 C. fat-free Caesar dressing
    3 T. reduced fat grated Parmesan cheese
    8 C. fresh spinach


1. Cook garlic and chicken in skillet coated with nonstick spray over medium-high heat until chicken is cooked through.
2. Drain tomatoes in colander over a bowl, reserving 1 tablespoon oil. Combine tomatoes, oil, chicken and remaining ingredients in a bowl; toss well. Microwave at HIGH 2 minutes or until warm. Yield: 3 servings
