    1 1/2 lbs extra-lean ground beef
    1 egg
    1 cup saltine crackers, crushed
    1/2 cup chopped onion
    3 tbsp ketchup
    1 tbsp mustard
    1 tbsp garlic powder
    2 tsp salt
    2 tsp black pepper
    1 can V8 vegetable juice - about 6oz.


Preheat Oven 350 degrees. Spray nonstick cooking spray in a casserole dish. In mixing bowl combine all ingredients except the V8 juice. Once ingredients are thoroughly mixed transfer to the casserole dish. Form the meat mixture into a loaf. Pour V8 juice over the entire loaf. Bake for an
1 1/2 hr - 2hrs.

makes about 12, 1/2" slices.
