3 large, very ripe bananas
1/2 C natural peanut butter
3 Tablespoons Earth Balance
2 teaspoons vanilla extract
2 Tablespoons maple syrup
1-1/2 cups old fashioned rolled oats
1 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon sea salt
3/4 cup vegan chocolate chips (calculated with Enjoy Life Mini Chocolate Chips)
Directions
1) Preheat oven to 350 degrees
2) In a large bowl or stand mixer, mash the bananas
3) Add peanut butter, baking powder, Earth Balance, maple syrup, salt and vanilla. Mix thoroughly.
4) Add oats and flour and mix well.
5) Add chocolate chips and stir until well combined.
6) Line a baking sheet with parchment paper or use a silicone baking sheet
7) Take spoonfuls of the cookie dough and roll them into balls. Press the balls flat onto the baking sheet to form the classic cookie shape. (They won't flatten on their own).
8) Bake for 12-15 minutes, until the cookies are golden brown.
9) Place the cookies on a rack to cool.
10) Enjoy!
