    Butternut Squash, 3 cup, cubes (remove)
    Onions, raw, 1 cup, chopped (remove)
    Salt, 1 tsp (remove)
    Pepper, black, 1 tsp (remove)
    Olive Oil, 2 tbsp (remove)


Peel squash and cut into ½ inch cubes. Peel and chop onions. Toss both items with a little olive oil then salt and pepper to taste. Spread items on a greased cookie sheet and bake for 25 minutes on 350 degrees. Makes 6-8 1 cup servngs

  • Okay have not made this but number of servings does not make sense. If you have 3 cups of squash & 1 cup of onions they do not become 8 cups cooked?????? Which of course makes me wonder about the calorie and other nutritional information. It does sound like a easy good dish to do. - 2/18/08
