    1 stick of butter
    1 cup enriched plain four
    1/2 cup chopped onion
    4 cups chicken broth
    2 cups water
    2 cups skim milk
    1 cup half and half cream
    6 large baked potatoes
    salt and pepper to taste
    1 cup cheddar cheese low fat-shredded
    1 cup mozzarella cheese - shredded


melt butter, saute' chopped onions. Stir flour until moist. Add chicken broth, stir as thickens; stir in milk and cream...continue to cook on medium heat, stirring to prevent burning. When thicken, add peeled potatoes (cut in cubes)...stir... about 10 minutes... add cheese; stir til melted...salt and pepper to taste; heat on simmer. Serve and top with bacon bits and chopped green onions.
