    -2-3 ripe bananas
    -1/3 cup butter, melted
    -4 eggs
    -2 tbsp honey (you can omit if your bananas are really sweet)
    -1tsp vanilla
    -2 C almond flour
    -1 tsp baking powder
    -1 tsp baking soda
    -1/2 tsp salt
    -1/2 tbsp cinnamon
    -1 C nuts (optional - recipe nutrition includes 1 C walnuts)


Muffins might not pop right out of the tin, you might need to take a butter knife and twirl it around them first. Let them set on a cooling rack.


Combine bananas and melted butter, mix well (it's okay if you have some banana lumps). Add eggs, honey, and vanilla and whisk until eggs are combined.

In separate bowl combine dry ingredients, almond flour, baking soda, baking powder, salt, cinnamon. Mix well, stir into wet ingredients. Add in nuts (optional) last. Should be a nicely mixed yet lumpy mixture.

Transfer to greased mini-muffin pan. (You can use spray like PAM or butter on paper towel in each muffin cup.)

Bake at 350 degrees for approximately 12-15 minutes until browned or toothpick inserted comes out clean. If using a loaf pan, grease loaf pan and bake for about 40 mins.
