    Red onion, 1 serving
    Carrots, raw, 1 cup, chopped
    Garlic, 1 clove
    Green Peppers (bell peppers), 1 cup, strips
    Jalapeno Peppers, 1 cup, sliced
    *Extra Virgin Olive Oil, 2 tbsp
    *Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 0.25 cup
    Broad beans, 1 serving
    Tomato, grape (3oz = appro 12 tomatoes), 1 oz
    Mushrooms, fresh, 1 cup, pieces or slices
    *Balsamic Vinegar, 1 tbsp
    *Bok Choy, raw-shreaded, 0.5 cup
    Cabbage, chinese (pak-choi), raw, 1 cup, shredded
    Mrs. Dash (R) Garlic & Herb Seasoning Blend, 0.25 tsp


Boil broad beans the night before ( this makes it really soft at the time of use).
In a sauce pan heat place onions, garlic and quinoa. Cook until onion is brown. Pour two cups of water and bring to the boil until quinoa turns translucent.
Put in the rest of the ingredients and leave to simmer for about 6 minutes.
Blanch book chop and Chinese cabbage separately and toss in dressing.
Serve soup accompanied with warm salad.
