Ingredients

    14-18 oz warm water or potato water
    2 T butter
    3 T honey
    1 1/2 tsp Kosher salt
    2 1/2 C unbleached all purpose flour
    1 1/4 C white whole wheat flour
    1/4 S soy flour
    6 T ground flax seed meal
    2 T golden flax seed
    2 T vital wheat gluten flour
    1 T psyllium husk powder
    3 tsp bread machine yeast


Tips

12.8 oz unbleached/14.3 oz whole grain=27.1 oz dry ingredients (52% whole grain loaf)


Directions

1. Add ingredients to bread machine in order.
2. Select Dough setting
3. On tone, remove to lightly floured surface, flour hands and knead 10 times - form loaf - place in greased loaf pan - spray lightly with oil - cover with plastic wrap - let rise 30-60 min. in warm place - while pre-heating oven to 350F.
4. Bake 25-30 min @ 350F
5. Remove from oven to wire rack
6. Cool in pan for 10 min. - then turn loaf out on wire rack - cool completely - store in air tight container

Serving Size: Makes 1 - 4" x 13" loaf or 20 servings
