    1 TBS. coconut oil
    1 TBS. cumin seeds
    1 tsp. mustard seeds

    1 jalapeno pepper, minced
    1 medium onion, chopped
    1 clove garlic, minced

    3 tsp. fenugreek
    1/2 TBS. ground cumin
    1/2 TBS. ground corriander
    1/2 tsp. red chili powder
    1/2 tsp. turmeric

    16 oz. okra, cut into pieces
    6 medium tomatoes, seeded and diced

    1/2 TBS. garam masala


In large skillet, heat first three ingredients until seeds start to pop.
Then add next three ingredients. Cook until onions are translucent.
Add next five spices and cook about five more minutes.
Add okra and tomatoes and mix well. Cover and cook until tomatoes and okra are soft & tender, about 8-10 minutes.
Uncover, add garam masala, mix well, and cook 3-5 more minutes.

Serving Size: Makes four servings.
