    1 Tbsp light butter
    1 clove garlic, smashed
    3/4 cup long grain rice
    1/4 cup broken whole grain spaghetti pieces
    2-2 1/2 cups low-sodium chicken stock
    1 cup frozen peas
    3 Tbsp parmesan cheese


Smash garlic and put in pan with butter over medium heat. Let butter melt and get bubbly. Remove the garlic. Add rice and spaghetti and let toast about 10 minutes or until lightly golden brown. Turn heat down to low and add chicken stock. Bring to a boil. Cover and let simmer about 15 minutes. Add frozen peas and let simmer another 5 minutes. Let stand 5 minutes before serving. Sprinkle with parmesan cheese.
