    Quinoa, 2 cups cooked
    4 oz Carando Hot Capicola, approx 1/4 thick, chopped 4 4 oz mozzarella, 2 oz (remove)
    Onions, raw, .5 small (remove)
    Scallions, raw, .5 cup, chopped (remove)
    Cherry Tomatoes, Fresh, 1 Tomato, 2 serving (remove)
    *Baked Potato, with skin, 1 small (1-3/4" to 2-1/2" dia.) (remove)
    Egg, fresh, 3 large (remove)


I baked a little longer - about 20 because ingredients weren't cooked all the way through.Next time I will suate ingredients first


cook quinoa per directions; place in mixing bowl, combine all ingredients mix throughly. Place approx 1.5 tbs in mini muffin pan. Bake at 350 for 10 minutes. let cool or serve warm.
