    1 c. lentils
    4 c. water
    1 c. chickpeas, canned, drained
    1 c.elbow macaroni
    1 c. jasmine rice
    1 can diced tomatoes
    1 small can tomato sauce
    1 large onion chopped
    3 cloves garlic, chopped
    2 Tbs. olive oil
    1 Tbs. cumin
    salt & pepper to taste


Wash lentils and add to the water. Bring to a boil and then turn heat low and simmer 20 minutes until lentils are done. Add the rice to the lentils in the water and cook covered, 20 minutes or until rice is cooked. In a separate pot cook macaroni. Drain chickpeas and add to hot macaroni to warm them up. In a skillet, heat the olive oil and cook onions and garlic until soft, add cumin and tomatoes and tomato sauce and simmer 10 minutes. Add s & p to taste. Mix everything together and serve. If you like it spicy hot add cayenne or Chines garlic chili paste.

Serving Size: Makes 8 - 1 cup servings.
