    1/2 cup whole wheat flour
    1/2 cup all purpose flour
    2 tbsp. ground flax seed
    1 tbsp. granulated sugar
    2 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp.salt
    1 egg
    1 1/2 cup sour milk (or fresh milk+ 1 tbsp. vinegar)
    1 tbsp. canola oil
    oil for brushing pan


Add chocolate chips, substitute butter for oil, and brown sugar for the sugar to make yummy chocolate chip cookie pancakes, or try a cinnamon sugar and butter swirl on top before you flip. You can also top with bananas, blueberries or diced apples before you flip.


Mix the flours, flax seed, sugar, baking powder, baking soda, and salt. Set aside. Mix the egg, milk and oil. Add wet and dry ingredients together and mix just until combined. Heat pan over medium high heat. Pour batter to desired size. Cook until lightly golden and bubbly, about thirty seconds to one minute. Flip and finish cooking on the other side. Set aside and repeat with remaining batter.

Serving Size: two small or one large pancakes
