Number of Servings: 12


    1/2Kg of turkey breast (turkey scallopini cubed)
    1-1/2 cup chopped onions
    6 cloves of garlic (finely chopped)
    2 cans of white kidney beans (drained and rinsed)
    2 cups frozen sweet corn
    1 cup sliced white mushrooms
    3 cups chicken broth
    1/2 cup Fat-free Greek Yogurt
    2 tbsp chili powder
    1/4 cup green chili salsa
    1 tbsp Extra virgin olive oil


If you like your chili spicy, you can add red pepper flakes, hot sauce, fresh chilies, jalepenos or cayenne pepper. You can always add more vegetables too. For a southwestern-style soup, omit the greek yogurt and add more chicken broth.


In a large pot on med-high heat add the olive oil and saute the onions and garlic until the onions are translucent. Add the turkey and cook until the turkey has cooked through. Add the chili powder and mix well. Add the beans, corn, mushrooms, chicken broth and the green chili salsa and simmer for 60 min. Reduce the heat and slowly add the greek yogurt mixing well so the yogurt doesn't curdle. Adjust the seasoning to your taste and allow the mixture to simmer on low heat for another 60 min or longer (the longer the chili cooks, the more the flavours will meld). Serve and enjoy!!
