Introduction

After being diagnosed with gestational diabetes, I hunted for recipes that fit with my dietician's meal plan. I came up with this recipe as an easy serving of protein in the morning! Ingredients

    7 large eggs
    1 oz skim milk
    1 tsp black pepper
    dash of salt, to taste
    1 tsp dried parsley
    1/4 cup fresh spinach, finely chopped
    1 scallion, finely diced
    3 large mushrooms, finely diced
    1/3 sweet red bell pepper, finely diced
    1/4 cup shredded lowfat cheddar cheese

Tips

Customize your own with different fillings to suit your tastes. Try different seasonings, like chili flakes, or different types of cheeses or veggies. The possibilities are endless!


Directions

1. Preheat your oven to 350F. In a muffin pan, spritz a small amount of cooking spray into 7 of the muffin tins.

2. In a small bowl, combine the eggs, milk, salt, pepper, and parsley. Whisk vigorously until the mix is foamy.

3. Divide each of the veggies evenly among the 7 prepared muffin tins. Pour equal amounts of the egg mixture into each of the muffin tins. Use a fork to give each muffin tin a gentle stir and submerge all the fillings. Top each one with a pinch of shredded cheese.

4. Place the muffin pans in the oven, bake for approximately 15 minutes. Check for doneness after 10, as this may vary depending on the size of the muffin tins.

Serve immediately, and/or allow to cool and store in a tightly-sealed baggie.
