    *Ancient Harvest Traditional Whole Grain Quinoa 0.667 cup, dry
    Beans, black, 1 can
    1 Red bell pepper,
    Avacado, whole
    *Athenos Reduced Fat Feta Cheese, 1 oz
    Sweet potato 2 small
    Cumin, to taste


Cook quinoa according to package instructions.
puncture sweet potatoes with fork, wrap in paper towel and microwave for 6 minutes.
Meanwhile, cut up avocado, bell pepper, and place in plates. Top with black beans, rinsed.
Once sweet potatoes are done, peel and slice into cubes, top each plate. Top with quinoa once cooked. Sprinkel with feta and cumin to taste. Enjoy.
