Ingredients

    1 pounds lean ground turkey (at least 90% lean)
    1/2 chopped onion
    1 cup peas
    1/2 cup chopped carrots
    1 cup chopped celery
    1 teaspoon salt
    1 teaspoon garlic powder
    1 tablespoon black pepper
    1/2 can cream of mushroom soup
    3/4 cup low sodium chicken broth
    1 tablespoon extra virgin olive oil
    2 1/2 cups chopped cauliflower


Directions

Heat 1 teaspoon olive oil in a non-stick pan. Add onions, cook over low-medium heat for a few minutes. Then add celery, carrots, peas, garlic, black pepper, and salt. Cook until tender/soft. Mean while, in another pan, brown ground turkey. Add paprika and chili powder. Once brown, drain off all excess fat/grease. Combine vegetable mix with meat, and add half a can of cream of mushroom soup. Mix until blended.

Pre-heat the over to 350 degrees F.

In a food processor/blender, blend cauliflower, chicken broth, olive oil, and black pepper. Blend until the texture in similar to that of mashed potatoes.

In a 9x13 inch baking dish, pour ground turkey mixture on the bottom, and top with the cauliflower mixture. Place in oven and bake for about 30 minutes.
