Number of Servings: 12


    3 eggs
    1 c. sugar
    3/4 c. flour
    1 t. lemon juice
    1 t. baking soda
    1/2 t. salt
    1 T. cinnamon
    2 t. ground ginger
    2/3 c. pureed pumpkin

    1 c. powdered sugar
    8 oz cream cheese, softened
    4 T. butter, softened
    1 t. vanilla


Preheat oven to 350 degrees.
Beat eggs and lemon juice.
Add in pumpkin SLOWLY.
Combine sugar, flour, baking soda, salt, cinnamon, and ginger in a separate bowl.
Add dry ingredients to wet.
Beat until just mixed.
Pour into a greased jelly-roll pan.
Bake 12 min.
Cool for 5 minutes then wrap in a powder sugar covered towel. (sleeping bag style)
Put in fridge for 30 min.

Combine cream cheese, butter, and vanilla.
Beat till creamy.
Add powdered sugar slowly.

Pumpkin Roll:
Unroll crust.
Spread filling till 1-in from all sides.
Roll (not too tightly) sleeping bag style.
Chill or serve.
Slice with string.
