    4 flatout good light originals
    ˝ cup Wholesome Sweeteners Organic Fair Trade Honey
    1 sprigs fresh rosemary
    1 tbsp of fig spread, jelly, or chopped figs
    1 – 15 ounce container fat free ricotta cheese
    2 cups baby arugula
    Course sea salt
    Freshly ground black pepper
    Parmesan cheese – a few shavings as garnish


Lightly toast the flatbread in a toaster oven.

Heat the honey with the rosemary sprig over medium heat. Add the fig spread and stir. Once it starts to thicken, remove from heat. Leave the rosemary spring in to infuse the honey.

When the flatbread is lightly toasted, spread with the ricotta and sprinkle on salt and pepper, and then layer on the arugula. Using a slotted spoon, drizzle the honey over the figs. Sprinkle with a few shavings of Parmesan cheese. Cut or break into pieces and serve.

Serving Size: makes 4 flatbreads
