Introduction

Number of Servings: 6

Ingredients

    10 medium baby carrots, minced
    1 Granny Smith apple, minced
    1 lb Ground Turkey
    1 large egg
    6 tsp worcestershire sauce
    1 tbsp or 3 tsp Grey Poupon mustard
    1/2 panko bread crumbs
    1 tsp italian seasoning or Mrs. Dash Garlic & Herb Seasoning Blend
    1 package Betty Crocker Butter & Herb Mashed Potatoes, prepared according to package instructions.

Directions

1. Preheat oven to 400 degrees fahrenheit.
2. Mince apple and carrots
3. Mix together apple, carrots, ground turkey, egg, panko crumbs, worcestershire sauce, mustard, and seasoning.
4. Spray a muffin/cupcake pan (should hold twelve) with non-stick coating.
5. Equally distribute meatloaf between each section.
6. Bake for 20-25 minutes.
7. Meanwhile, prepare mashed potatoes according to package instructions.
8. Top each mini meatloaf with a dollop of mashed potato and bake an additional five minutes.
