    Chicken Breast, no skin, 6 ounces
    Flour Tortillas, 3 tortilla (approx 10" dia)
    Mozzarella Cheese, part skim milk, 2 oz
    La Victoria Enchilada Sauce, 1 cup
    Cream Cheese, 3 oz
    Black beans, 1 cup
    Brown rice, 1 cup


Cook and shred the chicken breast while cooking rice. Take this time to also drain and rinse off black beans.

Once chicken is cooked, mix the cream cheese, and half of the can of enchilada sauce together. Feel free to add other veggies or salsa to this mix (not in calorie count).

Spread out tortillas (I used Mission, white flour large tortillas) on a cooking dish. Distribute rice and beans to the center. Add mixture of of chicken, sauce, and cream cheese. Roll of tortillas and pour the rest of the enchilada sauce on them. Then sprinkle with cheese and spices.

Cover in tin foil and cook for 25 minutes at 375 degrees. Enjoy!
