    Pie crust, graham cracker
    3 cups of soy milk
    1/3 of a cup of corn startch
    1/3 of a cup of sugar
    3 tbsp of cocoa powder
    1 tsp of vanilla extract (not necessarily needed)
    3 tbsp of your choice in vegan or non-dairy chocolate chips


Put crust in oven for 10 minutes at 375 degrees and then remove to cool.

In a medium sauce pan, dissolve the corn startch in 1 cup of the soy milk. Once dissolved, add the rest of the ingredients EXCEPT the chocolate chips and whisk together with a fork. The chocolate cocoa will be lumpy but will eventually dissolve. Turn heat up to medium and let it come to a boil, whisking occasionally. Turn down heat to low and add the chocolate chips until they are melted and the chocolate is now thick.

Remove from stove and pour into pie crust. Let it sit out on a counter until it stops steaming. Then transfer to fridge for at least 2-3 hours, or until completely cooled.

Tastes great with strawberries or whipped cream!
