    1/3 cup tapioca pearls
    3 cups water
    9 TBS. coconut milk powder
    3 TBS. raw honey
    1 TBS. chopped pistachio nuts
    1 small pinch of saffron
    1/4 tsp. cardamom powder
    3 TBS. raisins


Prep time includes the 2 hours for soaking the tapioca pearls.


Soak tapioca pearls in 1/3 cup water for two hours. All the water will soak into pearls, making them light and fluffy.
Bring water to a boil and add coconut milk powder, stirring constantly for ten minutes.
Add the pearls and cook until they are translucent, about 4-5 minutes.
Add the remaining ingredients to the boiling mixture, stirring constantly for an additional 2-3 minutes.
Pour into small dishes (I use ramekins). It will become a little thicker as it cools.
Refrigerate for an hour or more and enjoy.

Serving Size: Makes five servings.
