    1 medium onion, chopped
    2 large red ripe tomatoes, chopped
    1 1/2 cups mushrooms, sliced
    3 boneless skinless chicken breasts, in pieces
    4 tbsp olive oil
    3 tsp Knorr chicken tomato soup base
    2 packets of Goya Achiote and Culantro seasoning
    1/2 cup water


Heat oil in large pan. Add onion and cook until tender. Add chopped tomatoes, soup base, and the Goya seasoning. Once it's cooked for about 5 minutes add the mushrooms and water. Add the chicken pieces and simmer on low heat for 20 minutes or until chicken is done. Serve over couscous.
