My take on Whole Food's Southwest Black Bean and Corn Salad My take on Whole Food's Southwest Black Bean and Corn Salad
Number of Servings: 4

Ingredients

    1 can black beans, rinsed
    1 can whole kernel corn, rinsed
    2/3 chopped orange bell pepper
    1/2 chopped green bell pepper
    3 tablespoons chopped fresh cilantro
    juice of 1 lime
    2 tsp cumin
    2 tsp chili powder

Tips

Adjust the seasonings as you wish. I don't add salt because I try to watch my sodium, but I add A LOT of cilantro because I love it!


Directions

I rinse the beans and corn and put in a big bowl. I microwave them for 2 minutes (I shake the bowl a bit after 1 minute). Then I add the rest of the ingredients as I prep them. Stir all the ingredients. I have been freezing most of this for quick meals to grab for work. By lunch time, its thawed out!

Serving Size: Makes about 4.25 cups...I dish it out in 1 cup servings
