    1 pounds fennel bulbs (about 2 bulbs) cut into 1/4 slices
    1/2 tablespoon safflower oil
    salt and pepper to taste
    1 oz part-skim mozzarella cheese, shredded
    1/4 cup panko bread crumbs
    1/4 cup parmesan, grated
    1 teaspoons fresh thyme, chopped


Boil fennel slices 5 - 6 minutes
Drain & toss with salt & pepper
Layer slices in a baking dish
sprinkle on cheese, breadcrumbs & thyme
Cover with foil and bake at 375 for 20
Remove the foil and bake for another 10 minutes until brown

Serving Size: Makes 2 servings
