    1 cup Turnip - peeled and chopped
    1/2 cup Carrots chopped
    1/2 cup onion diced
    2 sliced jalepeno peppers
    1 med potato - peeled and diced
    4 cloves garlic - peeled and diced
    1/2 cup cauliflower diced
    1 cup white rice (leftover)
    1 can Progresso Lentil soup
    2 tbsp olive oil
    1 tbsp butter
    1 box (quart) chicken broth - fat free


I use a can of soup to give it the salt needed. They never have enough veggies for me without adding more.


dice all veggie to bite size
finely dice onion and garlic.
Saute all veggie in olive oil to soften, add butter for final few minutes of sauteing.
add chicken broth, heat to finish cooking potato.
add can of soup. finish heating and serve

Serving Size: makes 9 1-cup servings
