    2 regular 9" pie crusts, calculated with Pillsbury, Pet-Ritz
    2 sweet potatoes
    1/2 cup 1% milk
    1/2 cup maple syrup
    1 tsp vanilla extract
    1/4 tsp nutmeg
    2 large eggs


1. Peel you sweet potatoes. Rough chop. Boil until soft. Drain.
2. Preheat oven to 350F. Bake pie crusts as directed.
3. In large mixing bowl, mash sweet potatoes. You can use a beater for this. Add milk, maple syrup, vanilla, nutmeg, and eggs. Mix well.
4. Spray pie crusts with non-fat cooking spray. Pour half of sweet potato mixture into each pie crust.
5. Carefully place pies into oven. Cook for 1 hour or until sharp knife comes out clean from center of pie.

Makes 16 1/8-pie servings.
