    1-1/4 cups dried garbanzo beans
    olive oil cooking spray (sufficient amount to coat baking sheet. and later the burgers)
    3 tbsp tahini
    11/4 tsp salt
    1/4 tsp finely ground black pepper
    1/4 tsp baking powder
    1/4 cup raw onion, finely chopped (optional)
    1 sweet potato ( small approximately 133 grams)

pre- soak garbanzo beans in one quart of water overnight. ( from 12 to 24 hours) drain and then rinse well.
preheat oven and spray olive oil cooking spray to coat a baking sheet. Place Garbanzos, tahini, salt, pepper, baking powder in a food processor, scraping down sides as you go if needed, until mixture holds together when pinched, (2 minutes) transfer to a bowl where you can add onion (optional) and sweet potato. Mix well. Form into four burgers. Place on baking sheet. Cover tightly with aluminum foil . Bake 20 minutes. Remove foil, coat burgers with spray. Bake until crisp and brown underneath. (20 to 25 minutes) Flip burgers; coat with spray; bake until crisp on other side. (10 to 15 minutes)
