Ingredients

    2 tbsp Olive Oil
    1 diced Onion
    2 sliced carrots
    1 lb of thinly sliced boneless chicken thighs
    2 sliced celery stalks
    2 minced garlic cloves
    4 cups chicken broth
    1 cup water
    4 sprigs of thyme
    Salt and pepper to taste
    3/4 cup of quinoa

Tips

The original recipe calls for the additions of mushrooms and hot sauce, neither of which I have or like.


Directions

Heat olive oil in a pot; cook diced onion and sliced carrots for 6 or so minutes. Add chicken thighs, celery, garlic, and cook 5 or so minutes. Add chicken broth and water, quinoa, thyme, and salt and pepper to taste. Boil, reduce heat, and simmer 15-20 minutes until quinoa is tender. To with parsley.

Serving Size: Makes 6 cups of soup, 6 servings
