    Black-eyed peas (1 lb dried, about 6 cups soaked)
    Cumin seed, 2 tsp
    Chili powder, 1.5 tbsp
    Onions, raw, 1 cup, chopped
    Olive Oil, 1 tbsp
    Garlic, 4 cloves
    White Wine, 1 fl oz
    chopped tomatoes, 1 can
    Yellow Sweet Corn, Canned, 330 grams (2 small cans)
    Artichokes, frozen, 210 grams (1 regular can)
    Salsa, 1 small jar (temperature according to taste)


Use as a dip, salsa, topping, side, or small meal.


Soak black-eyed peas overnight if using dried.

Saute onion and garlic in oil until softened. Add spices then deglaze with a splash of white wine. Add beans, tomatoes and salsa with enough water to just cover the beans. Cook until beans are softened.

Let cool, then add corn and chopped artichokes.

Serving Size: makes about 9 1-cup servings
