Ingredients

    Pinto Beans
    Yellow Onion
    Red Pepper
    Green Pepper
    Walnuts
    Cider Vinegar
    Dijon Mustard
    Honey
    Olive Oil
    S&P
    Garlic

Directions

Boil beans according to directions.
Roast chopped walnuts until lightly brown.
Slice and carmelize peppers and onion until lightly brown and tender. Mix, beans, peppers, onion, and walnuts together. In a blender add: cider vinegar, mustard, honey, Garlic (S&P if desired) slowly add in oil. Toss dressing with bean mix and serve.
