    2 tbs veg oil
    4 chicken breast halves
    1/2 tsp slat
    1 medium onion chopped
    2 TBS water
    1/4 cup water
    2 tsp curry powder
    1/8 tsp ground ginger
    1/8 tsp ground cumin
    1 cup reduced fat sour cream
    4 cups cooked rice


1. heat oil in dutch oven and cook chicken in oil about 15 minutes, until brown on all sides.
2. sprinkle chicken with salt. Add onion and 2 tbs water to chicken. heat to boiling: reduce heat. Cover and cook about 20 minutes.
3. Remove chicken from skiliiet.
4. add 1/4 cup water, curry, ginger and cumin to skillet. Heat to boiling. Reduce heat to low, stir in sour cream just till heated.
5. Pour sauce over chicken on cooked rice. Sprinkle with peanuts, cilantro and coconut
