Introduction

I use a mixture of brown rice syrup and honey to sweeten these muffins, but honey alone will produce a slightly sweeter version, using all brown rice sryup will make it less sweet. Ingredients

    1/2 cup raisins
    1 large egg
    3/4 cup skim milk (buttermilk would also be good)
    1 1/2 cups bran cereal (not flakes)
    1 cup whole wheat flour
    1 teaspoon baking soda
    1 teaspon ground cinnamon
    1 tablespoon melted butter
    1 tablespoon olive oil
    1 apple cored and shredded (I used medium size)
    1 ripe banana mashed (again I used medium size)
    1/4 cup brown rice syrup
    1/4 cup honey

Directions

Preheat an oven to 400 F. Grease or line 12 muffin cups.

Cover raisins with water in a microwave safe bowl and microwave on high for 1 minute. Drain and set aside.

Beat the egg with milk in bowl, add the bran cereal and mix. Set aside for 5 minuest. Gently mix the remaining ingrediants.

Spoon the batter in the prepared muffin cups (I use an icecream scoop) and bake 20 minutes or until a toothpick inserted into the centre of a muffin comes out clean.
