Introduction

Moist and dense little muffins! Moist and dense little muffins!
Number of Servings: 18

Ingredients

    4 ripe bananas
    3/4 cup sugar
    2 TSP melted butter (unsalted)
    1/3 C unsweetened applesauce
    1 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt
    1 1/2 cups of flour (all purpose)
    1/2 C walnuts, chopped.

Directions

Preheat oven to 375 degrees F.

Line muffin pan with muffin paper cups.
Mash bananas well. Add sugar, applesauce, and melted butter. Chop and add the walnuts, reserving 2 tbsp for sprinking on top. Mix the dry ingredients really well or sift and then add to banana mixture.

Mix batter just enough to bring everything together. Fill muffin cups about 2/3 to the top and sprinkle with remaining chopped walnuts.

Bake for 20 minutes or till the muffins are golden brown. This makes 18 medium muffins.

    I made this tonight, I only had 2 bananas, so I just added 1 cup of no sugar added applesauce, and lessened the sugar to only adding 1/2 cup. Came out very tasty!!! Two thumbs up from me! - 1/13/09
