Ingredients

    2 T canola oil (for frying B sprouts + capers)
    1.5 pounds fresh Brussels sprouts
    1 chile pepper
    2 T honey
    2 T red wine vinegar
    1.5 T olive oil
    salt and pepper
    1/2 c. walnut pieces

Directions

Toast the almond pieces, either in the oven or on the stovetop in a small skillet.Trim and quarter the Brussels sprouts. Steam them for four minutes or cook them in the microwave for a minute and a half to get them started. Salt them and fry them in the canola oil until they start to get a little brown. While they're cooking mix up the vinegar, olive oil and salt and pepper. Chop the pepper really fine and stir them all together. Add the capers to the Brussels sprouts for a minute or two at the end, then remove from heat. Put the sprouts in a bowl, add the walnuts, and toss with the dressing.

Serving Size: Makes about six one-cup servings
