    3 Bananas, over ripe
    2 Tbsp Lemon juice
    1/2 cu Unsweetened Apple Sauce
    1/2 cu Brown Sugar
    2 cu Whole Wheat Flour
    3/4 tsp Baking Powder
    3/4 tsp Baking Soda
    1/2 tsp Salt
    1/2 cu Walnuts
    1/2 cu Dried Cranberries


Preheat oven to 350 F.

Set aside 1 tsp of brown sugar for topping. In a large bowl, mash bananas, lemon juice, apple sauce, and remaining sugar. Stir well.

In a separate bowl combine all remaining ingredients except sugar.

Add the dry ingredients to the banana mixture, stir just until mixture is well combined.

Spray a loaf pan with oil, Spread the mixture evenly in the pan and sprinkle with 1 tsp brown sugar. Bake until a toothpick inserted into center comes out clean, about 50 mins. Allow to cool before serving.

Serving Size: Makes 1 loaf (8 servings)
