Introduction
I developed this for my son who is a college athlete. He loves seitan, but wanted to make his own in the microwave. The end product is similar to 'monkey bread'... the meatballs are not round, but blended together. You can easily pull them apart, however.I developed this for my son who is a college athlete. Ingredients

1 cup vital wheat gluten
.25 cup nutritional yeast
1 tsps. italian seasonings (or other flavors if you'd like)
1 cup vegetable broth. ( I used .5 cups, plus some water, to make the seitan and .5 cups to cook it in)
Tips
You could lower the sodium by making your own broth. I think you could change flavors by trying different spices. I hope you enjoy this!
Directions
Mix together dry ingredients. Add 1/2 cup of the broth. You may use any broth you'd like. Incorporate until you get a soft dough. You may have to add some water, a little at a time to get the consistency you want. Form the dough into balls, about the size of a ping-pong ball, or a little smaller. Arrange them in a quart sized, anchor-hocking type bowl. Pour the remainder of the broth over the stack of meatballs. Bake on high in the microwave, uncovered, for about 5 minutes. You may store leftovers in the fridge... These are good warm and cold.
