Ingredients

    1 cup quinoa (cooked in 2 c. water)
    1 cup broccoli, cut into small pieces
    1 garlic clove
    1/2 cup grated light cheddar
    1/4 cup 1% cottage cheese
    2 tbsp earth balance
    1 tbsp flour
    0.75 cup skim milk
    1 egg
    0.25 tsp red chili flakes
    salt

Directions

Cook quinoa according to package directions.

Meanwhile, chop up broccoli. Add to cooked quinoa. Grate in 1 garlic clove. Add salt and red chili flakes. Mix in egg.

In sauce pan, melt 2 tbsp earth balance. Whisk in 1 tbsp flour and stir continuously, cooking for a few minutes. Add milk and bring to low simmer. Stir in cheddar cheese and cottage cheese.

Pour cheese sauce and mix well into quinoa mixture. Pour into pie plate and bake for 30 minutes, until crispy on top.

Serving Size: makes 4 main size servings
