    1 cup Beans, great northern
    1/2 tsp Cumin seed
    8 Flour Tortillas
    1/4 cup Jalapeno Peppers, sliced
    1/2 cup Green Chili Peppers, cnd
    1/4 cup Black Beans, cnd
    8 slice Red Ripe Tomatoes
    3/4 cup Cheddar Cheese, shrd
    1 1/2 tbsp Cilantro, raw, chpd
    1 tbsp Canola Oil


1. Combine northern beans and ground cumin in a bowl.
2. Place 1/4 cup bean mixture on each of 4 tortillas
3. Mash with a fork to within 1/2-inch of the sides
4. Sprinkle each evenly with 1 tsp jalapenos, 2 tbsp chilis, & 1 tbls black beans
5. Arrange 2 slices tomato on each.
6. Top each with 3 tbsp cheese, 1 tsp cilantro and the remaining tortillas.
7. Wipe a small amount of oil in a non-stick skillet, place over medium-high heat until hot.
8. Add 1 quesadilla and cook for three minutes on each side. Keep warm in 275 degree oven.
9. Reapeat with each quesadilla.
10. Cut in to 8 wedges (two per serving) and serve warm
