    4 cups baked squash
    1/2 cup fresh parsley
    3 TBLS whole wheat bread crumbs
    salt/pepper to taste
    2 plum tomatoes, chopped
    1/4 chopped onions
    2 garlic cloves, minced
    2 tsp EVOO


Bake squash on EVOO sprayed baking sheet at 400 degrees for 30 min. Let cool while cooking onion mixtures and then using fork, pull strands into large bowl.


Heat EVOO over medium heat, cook onions, garlic, parsley 4 minutes. Add tomatoes, cook 3 minutes.

In large bowl, stir together squash, onion mixtures, cheese, salt/pepper, cheese & cottage cheese. Pour into 13 x 9 pan.

Top with Parmesan cheese and bread crumbs. Bake at 400 degrees for 30 minutes.
