    Cauliflower, raw, 6 cups
    Garlic, 5 cloves
    Spanish Sweet Onions, raw, 1 large
    Thyme, ground, 1 tbsp
    Pepper, red or cayenne, 1/2 tsp
    Paprika, 1/2 tsp
    Blue Menu Low Sodium Chicken Broth, 2 cups
    Water, 6 cups
    Bay Leaf, 3


•salt and pepper to taste - I have not added as well used water and thyme to saute the onion in place of oil or butter.

Garnish with chives or bacon crumbles.


1) In a large pot or Dutch oven (best if it holds about 3 quarts), saute onions in a half cup water and thyme until the water evaporates and the onion soften. Add garlic, and cook another 30 seconds or so.

2) Add the cauliflower, and stir. Then add the chicken broth, water, herbs and spices. Cover, and bring to a simmer. Cook until the cauliflower is soft, about 20 minutes. Remove bay leaves.

4) Puree the soup with an immersion (stick) blender if you have one.

Serving Size: Yields 8 servings of about one cup each.
