    3t. olive oil (divided)
    1 large onion, chopped fine
    1/2 t. salt
    2 14oz cans chickpeas, drained and rinsed
    1t. paprika
    2t. cumin
    1/4 t. cayenne
    2 medium tomatoes, seeded and chopped
    3 c. fresh baby spinach
    1 avocado, seeded and flesh cut into small chunks


If the chickpeas get too dry and start to stick, add a splash of water or broth. Serve in small tortillas with a sprinkle of Monterey jack cheese.


Heat 2 teaspoons of olive oil in large non-stick skillet over medium-low heat and add onions and salt. Saute until softened and lightly browned, about 10 minutes. Add chickpeas, 1 teaspoon of olive oil, and paprika, cumin, and cayenne; cook until chickpeas are softened, about 10 minutes. Stir in tomatoes and spinach, cook until the spinach is wilted, about 3 minutes. Stir in avocado and season with additional salt and pepper to taste.
