Introduction

Trying a spin on using sour cream in mashed potatoes. Gives a tangy taste. Trying a spin on using sour cream in mashed potatoes. Gives a tangy taste.
Number of Servings: 8

Ingredients

    4 Medium Baking Potatoes
    1/4c Greek Yogurt (plain, nonfat)
    1/2c Milk (skim)
    2 Tbsp Butter (salted)
    pinch of rosemary
    salt and pepper to taste

Tips

Add more milk or yogurt to taste and to get consistency. A very little fresh rosemary goes a long way.


Directions

Bring large pot of water to boil

Peel (or not if you prefer skin in your mashed potatoes) and dice potato into large cubes. Boil until tender.

Drain in colander.

Mash potato cubes and add yogurt, milk, butter and seasonings to taste. Serve hot!

Serving Size: makes 8 servings
