Introduction

This caramel sauce is completely dairy free. Absolutely amazing. This caramel sauce is completely dairy free. Absolutely amazing.

Ingredients

    1 Cup Sugar
    1 TBS Vanilla Extract
    Dash Salt
    1 Can Full Fat Coconut Milk

Tips

Depending on how much it seizes or doesn't seize, this can take an hour to make. It is worth it though. I promise, this stuff is amazingly good.


Directions

Melt the sugar over med-low heat. This can take a while depending on your pan. Stir occasionally as it melts. Take care to not over stir though. As it's melting, add the vanilla and salt into the coconut milk. When the sugar is melted stir the coconut milk mixture into the sugar. It will bubble and steam violently, it might even seize up. Just turn your heat a little lower and keep stirring. The hardened caramel will dissolve into the milk, just keep stirring. When it's all dissolved (or mostly, sometimes I'll take out the last few small chunks as a treat), pour it into a jar. It will thicken as it cools.

Serving Size: Makes almost 2 cups
