    2 c. Bisquick Heart Smart
    1/2 c. sugar
    2 Tbsp oil
    2.5 tsp Pumpkin Pie spice
    1/4 cup egg beaters
    3/4 cup skim milk
    1/2 cup canned pumpkin


Optional topping: cream together 1 Tbsp. butter, 1 tsp cinnamon, 3 Tbsp rolled oats, and about 1/4 cup sugar. Press on top of pumpkin in the muffin tins before baking


Cream oil and sugar. Add egg beaters and milk. Add Bisquick and spices. Mix in pumpkin. Pour into greased or lined muffin cups. Bake in a 400 degree oven for 20 minutes. For miniature muffins bake for 10 minutes.
